My Favorite Thanksgiving Recipe

Hope you’re all having fun getting ready for Thanksgiving tomorrow! I wanted to share my all-time favorite recipe, my mom’s pumpkin pie. I usually make it every year! Below are recipes for the crust and the filling. Let me know if you make it!

Mom’s Pumpkin Pie

Crust (makes two 9″ crusts):

  • 2 C flour
  • 1 tsp salt
  • 2/3 C plus 2 T shortening
  • 4-5 T ice cold water

Directions:
Measure flour and salt into bowl. Cut in shortening until it is very crumbly. Sprinkle in water 1 T at a time until all is moistened and dough cleans the side of the bowl. Gather into two balls; flatten. Roll on flour-covered surface to fit pie pan.

Filling (makes one pie):

  • 3/4 C sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  •  1/2 tsp ginger
  • 1/4 tsp cloves
  • 2 T mollasses
  • 2 eggs
  • 1 (15 oz) can Libby’s pumpkin (100% pure pumpkin puree, NOT the can of pie filling!)
  • 1 can (12 oz.) Carnation evaporated milk (NOT sweetened condensed!)

Directions:
Preheat oven to 425* F. Mix all ingredients with a whisk. Pour into shell and bake in preheated oven for 15 minutes. Reduce heat to 350* and continue baking for 40-50 minutes or until a knife inserted near center comes out clean.
